Cheesecake is one of my guilty pleasures. I had cheesecake for dinner! LOL…the last piece which probably was enough to cut into 2 nice size slices. My very valid excuse for doing this was “I just survived the 1st night of dance show week and the dance moms”. No I am not a dance mom (felt like I needed to say that hahaha). I am a mother who allows her daughter to take dance classes for fun!
Here’s a yummy easy to make No Bake Cheesecake recipe…
What You Will Need:
2 8 oz Philadelphia Cream Cheese (room temperature)
1 Medium Lemon
1/3 Cup Condensed Milk
Graham Cracker and Almond Crust
8 Graham Crackers
1 stick of butter
1 cup sliced almond pieces
Fresh Fruit Topping
10 Larger Strawberries
2 tbsp sugar
First prepare the fruit topping. My topping of choice is strawberries. Clean strawberries and remove the green leafy top. Add 5-7 strawberries and 1 tbsp of sugar to a blender. Once completely blended put topping in the refrigerator to cool. Also slice all remaining strawberries and sprinkle sugar on top. Put the strawberry slices in the refrigerator.
Next let’s make the tasty graham cracker almond crust. Melt 1 stick of butter. Add 8 -10 broken graham crackers and a 1/2 cup almonds into a food processor. Turn the food processor on. Allow to pulse until all items inside are combined. At this point begin to slowly add melted butter while the processor is pulsing. Once the mixture has the consistency of wet sand (omg that’s the only thing I could thing of…no bueno) it is ready to be molded into a pan. A tin pie pan maybe best to avoid sticking. Lastly, crumble the rest of you almonds and add sprinkle onto pie crust. Set aside
Lastly let’s make the yummy tangy cheesecake filling. In a large bowl mix 16 oz Philadelphia cream cheese, juice from one medium lemon, and 1/3 cup of condensed milk.
Once thoroughly mixed pour the mixture into the pie crust. Spread the blended fruit topping onto the filling. Lastly sporadically place the sliced strawberries on top. Put the cheesecake and allow to chill for at least 2 hours. Then enjoy!
