Sausage Lentil Soup

I and my family absolutely love this soup. It is jammed packed with nutritious clean eating super  foods. This is an easy crock pot meal really!

Sausage Lentil Soup

What You Will Need:
1 roll ground sausage
2 medium/large russet potato
1/2 cup lentils
3 leaves of kale (not a kale lover? use another green leafy veggie)
2-3 fresh basil leaves
1 cilantro leaf
7-8 cherry tomatoes
5-6 cups chicken broth
salt (optional)

Prep Time: 20-30 mins
Cook sausage until brown. Drain grease from sausage. Clean all vegetables thoroughly as they will not be peeled. Slice potatoes. (I left mine in full slices because I love to taste potatoes in dishes.) Cut cherry tomatoes in twos or fours. The tomatoes will cook down so don’t worry too much about the cut. Chop cilantro and basil.Remove stalks from kale leaves and tear leaves into smaller pieces.

Cook Time: 2 – 3 hours (in crockpot)
Add chicken broth, lentils, potatoes, sausage and herbs to crockpot. Set crockpot to high heat. Allow to cook until lentils and potatoes are tender. After tenderness is confirmed add tomatoes and kale to crockpot. After all ingredients have had time to work their flavorful magic taste soup to determine the need for salt or any other flavoring object.


I paired this soup with artisan bread. Add a little olive oil and Parmesan cheese. Stick it in the over on broil for a few minutes. Make sure you keep your eye on it as broil can be brutal if over cooked.
